About Flying Fish Company

At the Flying Fish Company Restaurant and Market (@flyingfishpdx), Owner and Chef Lyf Gildersleeve leads with a commitment to sustainability and a deep respect for the ocean’s bounty. This is reflected in everything from sourcing sustainable seafood for the fish market & restaurant, choosing salmon-safe certified wineries, the use of non-GMO, rice bran oil for their famed fish and chips and to the hive of honey bees Lyf keeps for pollinating local gardens. The restaurant’s dedication to minimizing its carbon footprint is evident in its participation in the Pacific Power Blue Sky Program, sourcing products locally, and purchasing carbon offset credits.

Lyf’s passion doesn’t stop at the kitchen door; it extends into his advocacy for marine conservation. He currently sits on the advisory subpanel for the Pacific Fisheries Council, along with the policy council for Marine fish conservation network, founder of the non-profit 501(c)(3) and co-founding Shuck Portland for oyster restoration projects. Flying Fish Co. aligns with the most sustainable fishermen and organizations like Monterey Bay Seafood Watch and Marine Stewardship Council. With a family legacy of smoking and preserving seafood, Lyf continues to offer a unique flavor to their offerings, making the Gildersleeve family not just seafood sellers but stewards of a tradition that honors the environment and community.
